Welcome to 2017 everyone! The holidays are behind us, and we are all planning for big changes in the new year. Although we shouldn’t need a date change to make positive changes in our lives, January does feel like the perfect time to get active and shed the holiday belly we all escaped with. Yes, I’m talking to you! No shaming going on here; I’m carrying a little post-holiday pudge myself. This week has been a great start to a few of my goals, which mostly revolve around rock climbing more, practicing more yoga, and continuing to blog.
In the spirit of all this working out, I wanted to try a recipe that is simple, hearty, and gives enough energy to power through those sessions in the gym or studio. I brought these to my climbing gym ladies meet-up, and they were eaten up! They were also eaten up in my kitchen by myself, my boyfriend, and his dad visiting for the weekend. Needless to say, it’s hard to keep bite-sized treats alive for very long.
This recipe can be substituted, altered, and enhanced with other flavors easily, so don’t be afraid to customize. If the consistency gets too soft, add more of the hearty ingredients like oats or powders. Same goes for adding more honey or nut butter when the mix is too stiff. I’ve used an amazing peanut butter from Whole Earth with added sunflower seeds, flax, and pumpkin seeds that I’m obsessed with! It’s smooth but a little chunk at the same time, and adds more dimension to the recipe. Instead of honey I used a fruit syrup from Sweet Freedom, which has more sweetness with less fructose. Also, the ground flax seed is from Virginia Harvest, and has been subsequently used in my morning yogurt everyday since purchasing. All ingredients are gluten free, dairy free, vegan, and refined sugar free.
